SPICED TEA (MASALA CHAI)

Pavabji Special- Of course you’ve heard of chai, but do you actually know how it’s made? Traditional masala chai, or what most Americans know simply as chai, is black tea and milk combined with a blend of cinnamon, cardamom, ginger, cloves, black pepper, fennel, and star anise. A perfect end to any great Indian meal.
Cardamom gives this Indian drink a bright, piney sweetness tempered by a creamy base of evaporated milk and black tea.

MAKES 4 1/2 CUPS

Ingredients

12 cup evaporated milk
5 tsp. sugar
6 black tea bags
5 pods green cardamom, crushed

Instructions

Bring milk, sugar, tea, cardamom, and 4 cups water to a boil in a 2-qt. saucepan. Remove from heat; let steep for 5 minutes. Strain and serve hot.
